Purpose

To prepare and present, store food in a safe & hygienic manner, in accordance with all company standards
Performs a variety of duties relating to the provision of food for all outlets on site, to assist in the development of menu concepts and to ensure Health and Safety Rules are followed

Responsibilities

Day to day running of the kitchen to agreed levels

Ensure that portion control is monitored and recorded

Production and wastage sheets are completed and all information is recorded on appropriate forms

Ensure a daily check is made of all fridges and to report any short dates or quality issues are reported to the Manager

Temperature control records and relevant paperwork to be completed as required

To assist with menu planning, costings, ordering, stock control

Responsible for ensuring proper presentation, portion control, labelling, food allergen information are adhered to

Ensures proper food preparation by utilizing approved recipes and in following prescribed production standards

Completes shift work, as assigned, in a timely and thorough manner in accordance with department standards

Informs manager in a timely manner when supplies are low

Follows and observes all company policies and procedures

Consistently exhibits the ability to keep up with peak restaurant hours and does so calmly, accurately and efficiently

Checks to ensure that all display foods are merchandised attractively as per standards

Serve food neatly and attractively keeping high standards

Follows company standards for attendance and punctuality

Maintains professional appearance at all times, clean and well groomed in accordance with company standards

To provide holiday and sickness cover for the Head Chef

Education & Experience

NVQ 1&2 or equivalent

Knowledge of hot and cold food preparation essential

Good knowledge of food safety required

Food costing, menu planning, ordering and stock control
