Job Title: Artisan Baker/Pastry Chef Location: Discovery Park, Sandwich, Kent Salary & Terms: 20 days holiday (including bank holidays)
To prepare and present, a range of baked products in a safe & hygienic manner, in accordance with all company standards as directed by the Head chef.
Performs a variety of duties relating to the provision of food for all outlets on site and wholesale orders.
To assist in the development of bread/pastry concepts.
Ensure Health and Safety Rules are followed.
Ensuring daily bakery range is made to a high standard in a timely, safe and consistent manner as per company specification.
Baking, shaping and finishing of high quality breads and patisserie.
Sound knowledge of;
Artisan breads (sour doughs)
Danish pastries, Vienoisseries and confectionary items.
Buns and a range of morning goods.
Accurately following recipe formulas, weighing of ingredients.
Monitoring ovens and prover during production.
Able to work according to tight production schedules.
To assist the running of the Bakery/ kitchen to agreed levels.
Ensure that weights control is monitored and recorded.
Production and wastage sheets are completed and all information is recorded on appropriate forms.
Ensure a daily check is made of all fridges and to report any short dates or quality issues are reported to the Head Chef.
Temperature control records and relevant paperwork to be completed as required.
To be actively involved in production planning, costings, ordering, stock control.
Responsible for ensuring proper presentation, portion control, labelling, food allergen information are adhered to.
Ensures proper food preparation by utilizing approved recipes and in following prescribed production standards.
Completes shift work, as assigned, in a timely and thorough manner in accordance with department standards.
Informs chef, supervisor, in a timely manner when supplies are low.
Follows and observes all company policies and procedures.
Consistently exhibits the ability to keep up with peak production hours and do so calmly, accurately and efficiently.
Checks to ensure that all display foods are merchandised attractively per standards.
Serve foods neatly and attractively keeping high standards.
Follows company standards for attendance and punctuality.
Maintains professional appearance at all times, clean and well groomed in accordance with company standards.
Assisting with holiday cover for pot wash and stores.

Education & Experience
NVQ 2&3 Advanced baking/pastry or equivalent
Knowledge of baking/pastry preparation and production essential
Good knowledge of food safety required
Up to date health and hygiene certificate level 2
Current driving license
